Seasonal Fruit Pie Packets
Ingredients:
Selection of seasonal fruit (Apple, dried cranberries for our recipe)
Sugar, Cinnamon, Nutmeg
Fruit Preserve (Bumbleberry)
Vanilla
Lemon juice
Salt
Packets:
Phyllo pastry
Melted butter
METHOD:
- Heat chopped apple on stove, and coat with sugar, cinnamon and nutmeg
- Add dried cranberries, vanilla, lemon juice and pinch of salt
- Add fruit preserve and reduce mixture until thickened
- Let filling cool while you prepare your packets
- Cut the pastry into squares of the desired size
- Layer three layers, turning each 90 degrees and using a pastry brush, brushing melted butter between each layer EXCEPT the top layer where the filling will go
- Put filling in the center of each square and pull corners of pastry up into a nice packet
- Bake immediately in oven at 380, or store packets in fridge for up to 24 hours
